Sausage Casserole

"A simple, tasty dish which can be cooked in the oven or slow cooker. It uses skinless pork sausages which shed fat very readily under the grill. The quantities assume three sausages per person."

Recommendation: Why not add peppers and mushrooms as well if you like them?

Instructions

  1. Slice and fry the onions in a little olive oil until cooked and starting to brown. Add flour (up to the above amount, depending on the degree of runniness required) and slowly add the stock allowing the sauce to thicken. Add to pot.
  2. Grill the sausages until well cooked, allowing the fat to drip away. Add to pot.
  3. Peel, slice and parboil the carrots - allow to boil vigorously for two or three minutes. Add to pot.
  4. Season to taste and cook at Gas mark 4 (185°C) for about 2 hours. Alternatively, use a slow cooker, cooking for upwards of 4 hours on the high setting.
  5. Serve with potatoes (preferably jacket potatoes) and choice of vegetables.
