Lightly Curried Tomato & Onion Soup

Instructions

  1. Place the sliced onions (and garlic - optional) into a large saucepan and dry fry until the onions start to brown.
  2. Add the chopped tomatoes and bring the mix to the boil before reducing to a simmer.
  3. Add the curry powder (add more to taste) and season. Continue to simmer for 2-3 minutes.
  4. Empty the contents of the pan into a food processor and blend until smooth.
  5. Return the puréed liquid to the original saucepan and heat through until hot (adding green chillies for taste and decoration – optional).
